Dried shrimp drying technology


First:Boiled shrimp, according to the local habit is divided into brine boiled shrimp (salty dry products), seawater boiled shrimp, fresh water boiled shrimp (light dry products).

1. Boil shrimp in salt water:

Then, according to the freshness of the raw materials, the processing season, the weather, and other conditions, add 8%~10%, or no more than 15%, of salt. Then, boil and make clear the foam. Then pour the fresh shrimp into the pot, stir for 2~3 times, and make the shrimp cook evenly.

Remove and drain for drying.

2. Boil prawns in fresh water: Fill the prawns pot with 70% fresh water, bring to a boil and pour in the washed ingredients. Boil and stir for 2-3 times until the shells shine and the prawns are cooked through.

Usually do not add salt, but in rainy weather can not be timely dry, it is necessary to add salt 5%~10%.

3. Cook shrimp in seawater: cook shrimp with fresh water.

Although it is cooked with sea water without adding salt, it is still a light and dry product. Only in rainy weather with 5%~10% of salt, it is a salty and dry product after processing.

The above boiling water can be used for a second time after the shrimp is removed, but only for a maximum of 3 times.

 

Second:Heat pump drying process of dried shrimps:

1. The steamed shrimp can be dried with shell, or the peeled shrimp can be dried.After the cooked prawns are drained, they are evenly spread on the baking plate, loaded into the material truck, and then sent to the shrimp drying room.

2. According to different varieties of shrimp, the temperature of the intelligent control system of the shrimp heat pump dryer is set at 50~ 70. The time is about 4 hours, and the water is 18%.The drying process generally requires a slightly larger circulating air volume and high wind speed to avoid water vapor staying on the dry surface of shrimp. The key points of control are to inhibit the growth of bacteria and maintain the color of dried shrimp and shrimps.            

3. According to the above drying steps, dried shrimps baked by the dried shrimps heat pump dryer are complete in shape, clean in appearance, natural in color, light yellow and red with luster, plump in meat, curved in body and unique in natural fragrance.     

 

Third:Shell

Sheller can be used for shrimp sheller, also can be peeled by hand.  

 

Fourth:Packaging
